Chocolate Banana Chia Pudding

This creamy chocolate chia pudding tastes like dessert but eats like a power snack. Mashed banana keeps it naturally sweet, cocoa makes it rich, and chia seeds pack in fibre and omega-3s. Make it tonight, grab it tomorrow.

Prep time: 10 minutes | Cook time: none (plus 4 hours chilling) | Servings: 2

Ingredients

  • 1 ripe banana, mashed
  • 250ml milk of choice (dairy or oat)
  • 3 tablespoons chia seeds
  • 2 tablespoons cocoa powder
  • 1 tablespoon maple syrup or honey, plus more to taste
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Dark chocolate shavings and banana slices, to serve

Instructions

  1. In a bowl or jar, whisk the mashed banana, milk, cocoa powder, maple syrup, vanilla and salt until smooth.
  2. Stir in the chia seeds, making sure none are clumped together.
  3. Cover and refrigerate for at least 4 hours, or overnight, stirring once after 30 minutes if you remember.
  4. The pudding is ready when thick and spoonable. Give it a good stir.
  5. Divide between two bowls or jars and top with banana slices and dark chocolate shavings.

Tips

If it is too thick in the morning, stir in a splash of milk. For a mocha twist, add a teaspoon of instant coffee to the mix. It keeps for up to 4 days in the fridge, so it is perfect for meal prep.
