Prep time: 5 minutes | Cook time: none | Servings: 1

Ingredients

  • 200g plain Greek yogurt (2% or full-fat)
  • 1 tablespoon honey, plus extra to drizzle
  • 1/2 teaspoon vanilla extract
  • 100g mixed berries (strawberries, blueberries, raspberries)
  • 40g granola
  • 1 tablespoon chopped almonds or walnuts (optional)

Instructions

  1. Stir the honey and vanilla into the Greek yogurt until smooth.
  2. Spoon a third of the yogurt into a glass or bowl.
  3. Add a layer of berries and a spoonful of granola.
  4. Repeat the layers, finishing with berries, granola and a drizzle of honey.
  5. Sprinkle over the nuts if using, and serve straight away.

Tips

Use frozen berries in winter — thaw them for 10 minutes and use the juice as a natural syrup. For extra protein, stir a tablespoon of peanut butter into the yogurt.
